Rare Juicy
How do I order a filet mignon for maximum succulence?
I want a really juicy steak, but not too hard. I usually order it Medium Rare, but it has been coming back a little too hard. How do I do that? Should I just pray that it not be too hard?
I am a chef and cook filet mignon every time I'm at work. For best taste, I would say (my opinion) that it should be cooked no more than medium rare. The key is that after the capture of grill, it must rest on the plate or warming counts for a couple of Minit juices to redistribute into the meat. Otherwise it will be dry.
